I'm wondering this too. I have 38 hearts and 3 full stamina wheels. All shrines plus heart containers from 6 bosses and an extra heart container from a side quest. It's possible there are other side quests that give heart containers but if so I don't think it's been documented well yet.

I've known about the apparatus glitch from BOTW by visiting the shrine in Hateno by glitching out the menu than dealing with the horned statue to duplicate hearts or stamina. Like in BOTW, also in TOTK it's either one or another as you can only pick between a full 3 wheel stamina bar or 40 hearts since you cannot have both.

id recommend vah medo or vah ruta. those were the easiest divine beasts for me. also, farm durians and cook them. if you combine 5, youll get like 15-20 extra hearts. Shrines and defeating divine beasts are the only way to get permanent hearts. Most of the shrines are all relatively short puzzles.
